Packing...

...and very busy! Thanks for all of your comments on yesterday's post about TSL Challenge! Although I will still eat on out occasion, I already bring my lunch to work every day and cook most of our dinners, so I am looking forward to seeing how much further I can take it :)

Also, for more on the benefits of drinking coconut water, here is some info from the Vita Coco website (my fave brand because they're the cheapest!). Also, don't confuse coconut water with coconut juice...not the same thing!
  • the 5 essential electrolytes: potassium, sodium, magnesium, calcium and phosphorous
  • more potassium than a banana (don't tell the monkeys) & 15 times more potassium than the leading sports drink
  • potassium which helps regulate blood pressure, heart function and enhances the hydration process
  • properties which promote smoother more hydrated skin
  • no artificial sweeteners and is low in carbohydrates
Some healthy eats yesterday included a sweet potato, avocado and salsa wrap with a spinach salad for lunch; some plain non fat yogurt with applesauce, cinnamon, honey, PB and a banana for a snack; and sauteed swiss chard with a Morningstar Ginger Teriyaki Rice Patty (and some more lima beans with buttah).



Also been getting ready for my big race! Making a list, and checkin' it twice :)



That's all folks! We are driving up to North Carolina after I get off work this afternoon and will be staying with my dad for the race in Greensboro. I'm getting excited!

  2. I am so excited for you!! I'm not sure we could give up the eating out for a month, it would be a challenge for sure. I am very interested in that cocount water though. Where do you buy it, Whole Foods?

  7. That wrap looks AMAZING. How do you know how to pick a "good" sweet potato? I love them, but only eat them around holidays doused in butter/marshmellows, and would love to start incorporating them in my meals. Great wrap idea.
